Believe it or not, I STILL have lots to post from our time in Europe! And, I’m totally not complaining. I love that our European excursions live on with editing still on my queue, and blog posts still to be written and shared, all while new adventures are being livedIt’s a win-win!
Today, I am SO excited to FINALLY be sharing our Scotland adventures with you! It’s really hard to rank our favorite European adventure, but Scotland is definitely up towards the top. This was a more spontaneous trip (as are a lot of our trips and adventures!)…and I’m SO glad we squeezed it in before I had to head back to the states to begin a very busy May wedding season!
We took a train out of Kings Cross on a late afternoon straight to Edinburgh. It was about a 5 hour speed-train ride- with the most gorgeous views traveling through the English and Scottish country side while the sunset. Truly spectacular.
We stayed in a sweet little hotel in the center of Edinburgh- the most beautiful old city. We loved Edinburgh, as it reminded us of much of the rest of the UK, but on a much smaller scale- which was super refreshing coming from a hugely bustling London! It was so wonderful to be just a short walks away from all the main sights in Edinburgh.
Upon arriving, we walked the streets of New Town Edinburgh in search of the perfect little hole-in-the wall dinner spot and stumbled upon the cutest little place- with the most YUMMY menu. I wish I had taken pictures of both Joey and I’s dishes- Scotland ended up being one of our favorite food spots (next to Italy’s pizza and amazing desserts!).
On our first full day, we decided to be brave and rent a car to explore the Highlands…the most adventurous part of our whole European adventure, for sure. I’m SO proud of Joey for braving driving the streets of a foreign country on a foreign side of the road! The views were totally worth the sheer fear of driving on the opposite side of the road
The highlands were among the most BEAUTIFUL country I’ve ever seen. I wish my pictures did the sights justice. Breathtakingly speechless views- I hope you all get a chance to go there someday!
On our final full day, we spent the day exploring lovely Edinburgh- exploring the castle, walking the Royal Mile, eating our weight in mussels ;), and watching the sunset at Calton Hill overlooking the whole city.
Scotland was a dream, and we feel so blessed to have been able to explore! Definitely hope to find ourselves back there one day…
